4 d’Octubre 2016 : Sopar degustació amb Maison Louis Jadot

A Marquet feia temps que estàvem pensant en un nou sopar-esdeveniment similar als que hem estat organitzant darrerament. Però aquest cop volíem preparar alguna cosa especial que es lligués molt estretament a la nostra historia de ja més de 40 anys. Desprès de reflexionar-hi molt, hem pensat que no hi havia millor idea que fer-ho homenatjant a la Maison Louis Jadot, una de les cases amb les que més hem treballat durant tots aquests anys i en la qual retrobem molts dels valors que busquem en els productes que volem oferir-vos sempre: tradició, exigència i qualitat.

Fundada a Beaune vilitra 20, en ple cor de la Bourgogne, al 1859, Louis Jadot ha produït vins excepcionals que ha fet conèixer al món sencer. És un dels negociants més reconeguts tant pels professionals del vi com pels simples aficionats, amb més de 225Ha en el Maconnais, la Côte d’Or i Beaujolais, i que cobreixen la majoria de les apel·lacions d’origen de la gran Bourgogne vitícola. La Maison Louis Jadot cuida amb el màxim rigor les seves produccions, que siguin d’una petita apel·lació regional o d’un “grand cru”, per mantenir la diversitat dels vins de la Bourgogne i assegurar la perennitat dels seus “climats”. Una missió que coincideix amb la voluntat de Marquet i en la qual ens vam retrobar per donar suport a la declaració de la UNESCO dels “Climats de Bourgogne” com a patrimoni de la humanitat al 2015.

Pel sopar que tindrà lloc el proper 4 d’octubre, ens ha assessorat Anthony Ravat, enòleg i responsable comercial per França de Louis Jadot, que també estarà present al sopar per comentar els vins elegits. Aquests són 3 blancs i 2 negres, molt representatius de la diversitat de la vinya de Bourgogne.

Començarem amb un Bouzeron 2014 Blanc fet al 100% d’Aligoté, una varietat molt antiga que ja es cultivava a la regió al segle XVII i que acompanyarà unes ostres Spéciales Gillardeau nº3 com a aperitiu. Seguirem amb un “Paté en croûte” que servirem amb un Marsannay “Clos du Roy” 2013, un Pinot Noir, la varietat de negre més comuna a Bourgogne, però que en aquest climat en particular té una qualitat excepcional que el fa candidat a ser un futur “premier cru” ben aviat. Passarem desprès a un llenguado amb salsa “beurre blanc” i ametlles que s’acompanyarà amb un Santenay “Clos de Malte” 2014, un Chardonnay molt mineral que es combina perfectament amb aquest tipus de plats de peix. Per la carn, que serà una pluma ibèrica, hem pensat amb un Morgon “Côte du Py” 2011. Es tracta d’un Gamay extraordinari, que té les qualitats suficients per ser un vi de guarda i que us sorprendrà per la seva complexitat i profunditat. I finalment, l’assortiment de formatges de Xavier tindrà com a company un Rully 2014, un altre Chardonnay que és criat com els grans vins de la Côte d’Or i que uneix delicadesa amb uns potents aromes afruitats.

El preu per persona d’aquesta vetllada excepcional, que tindrà lloc a Marquet Gourmeterie de la Plaça Coprinceps, serà de 50€.

March 26, 2015: tasting dinner with Carpier

We are already at the 4th session of tasting dinners in cooperation with our suppliers.

This Thursday, March 26, at 21:00, a close friend invites you to the restaurant Marquet Gourmeterie: Carpier, the reference in terms of smoked salmon and other products.

For once, we do not disclose the menu in advance. You will eat smoked salmon and other smoked fish in different dishes, just as appetizing as each other. Including smoked salmon fillet with gin tonic.

The evening will be hosted by Jordi Sanchez and Mr. CARlos PIERnas himself. Now you know why the company is called Carpier…

February 26, 2015: Landes farm duck tasting dinner

The 3rd tasting dinners session with our suppliers will be held on Thursday, February 26th at 21:00. The “Maison Paris” invites you to discover the best of duck at Marquet Gourmeterie restaurant

Maison Paris, located in Landes, south west of France, has 108 years of experience in farm duck breeding. Sandrine Lesgourgues, Adrienne Paris’ granddaughter, will host the evening. Adrienne Paris was the creator of the company, back in 1907.

The menu will offer a wide range of products:

– Rillette with foie gras, graisserons with foie gras and pâté with foie gras.

– Dried and smoked duck breast.

– Vintage goose foie gras and duck foie gras.

– Breast and confit “devant”.

The wines accompanying these dishes will be carefully selected in order to perfect your evening.

November 6, 2014: Alsacian white wines tasting with Catherine Faller from Domaine Weinbach

Thursday, November 6, Marquet will have the great honor to welcome Catherine Faller, Domaine Weinbach Alsace wines producer. And as we are generous, we will share this moment with you. Two events :

At 18:00, free tasting at Marquet Gourmeterie. While tasting some wonderful wines from that Domaine, you will chat with Catherine Faller, whose charm and friendliness will seduce you.

At 21:00, tasting dinner at Marquet restaurant. Catherine Faller will detail all wines matching the unique menu, specially created for the event. Good wine + good food = good atmosphere …

Afternoon tasting is open to all. For the dinner (40,00 € all included), please book your table as soon as possible.

The new menu of Restaurant Marquet

When is a restaurant said to be good? When one eats well there!…

With a view always to staying in this category, a new chef has just been welcomed to the Marquet team. Within only a few days, Sergi had prepared a new menu with Emilio, our patisserie chef. It has been completely rethought, simplified and modernised. In one word: better!

Here is a brief overview.

The appetisers conserve their timeless charm: Joselito ham, ham croquettes and charcuterie, Italian charcuterie, homemade foie gras (yes, it’s prepared here at Marquet), caviar, Carpier smoked salmon (see photo), anchovies, cod fritters, cheeses…

The salads have been reformulated, only their names remain. For cheese enthusiasts, tomato/mozzarella or goat’s cheese. For lovers of fish and seafood, tuna belly, smoked salmon (new) or Kamchatka crab.

A new category: cold specialities and cold soups, such as prawn or veal carpaccio (see photo), steak tartare prepared before you, and three soups including a refreshing vegetable and strawberry gazpacho (see photo).

With regard to pasta, Sergi has opted for linguini with three accompaniments, including the original version of carbonara sauce, that is to say without cream (see photo). Much better, in fact!

Then, the hot dishes. Here we range from the simple, such as the panaché of seasonal vegetables, to the sophisticated, such as the beef tournedos rolled in Joselito panceta with foie gras! Between these two, please pay particular attention to the fried ‘estrellats’ eggs, accompanied with fried potato. Nor let us forget two classic dishes: the duck breast in Armagnac and the 500g. Irish entrecote.

Fish? Yes, of course! Apart from the fish-of-the-day which you can discover there and then, savour our Icelandic cod fillet or treat yourself to THE grilled lobster.

Now we arrive at the desserts, the domain of MasterChef Emilio. Let us focus upon two wonders. The first: the cheesecake which will surely cause you to exclaim that it is the best you have ever tasted. The second wonder is truly surprising: a sweet burger! A dessert of Dulcey chocolate with caramelised mint, fruit, and a little more chocolate (see photo)… The other desserts offer the same degree of pleasure.
